THE MIND.
Just as in the past, today, to become established in the production of Chianti wines using ancient recipes means preserving, identifying and maximising. This wine is necessary to our evolution, just like bread or chocolate; it is a vehicle of history, a flying carpet for those wishing to view Tuscany from above. To stop making Chianti would, for us, to be like to stop breathing. Respiro is the result of the vinifcation of Sangiovese Toscano to which small amounts of Trebbiano have been added to increase the acidity and make the wine fresher and more delicous on the palate. The vineyard is "La Sala", an amphitheatre which protects the plants from the northerly winds. The aging in steel with microbullage and on fine lees creates a fresh, clean wine. Distinct.
THE BODY.
Respiro is lavish, spontaneous, elegant, with a soul that avidly maintains all the original aromas of the grape but, at the same time, bestows them in a generous, captivating way. Just like a breath. In the glass, the wine has a bright ruby red colour with crimson reflections, clear, with excellent fluidity. Fragrant and scented, it is also possible to note a sweet, fresh fruitiness. The perceptions of freshness and clear complexity flourish on the palate, leaving a clean and pleasantly velvety sensation.
THE SOUL.
Respiro. A sensation of serenity permeates the body making you feel at peace, at home. Awakening the awareness of a taste for the small things in life. Respiro. A return to our origins. Just like a child's first breath.
