THE MIND.
The Cabernet Sauvignon is grown in prevalently clayey soil with a strong presence of limestone strongly exposed to north-easterly currents; the Merlot resides in soil which is mainly limestone mixed with clay. The vines are cordon trained which makes it possible for all the energy of the soil to be concentrated in clusters. Using guided-integrated controls, we are able to obtain perfectly healthy grapes which are so rich that they need to be developed with the continuous contribution of oxygen, in close contact with the only living material whose magnitude is known to us, wood.
THE BODY.
Scirus is elegant with rousing features. Intense ruby red, with deep brownish-scarlet reflections, it makes a powerful entrance. It offers fragrant bouquets of ripe fruit, of blackberry and raspberry jams; it bestows surprising vegetable nuances, in perfect harmony with the final hints of exotic spices. Full and robust, with well-developed and pleasantly palatable tannins, it offers an overwhelming warm sensation of caramelized chocolate and sweet spices. With comforting notes of coffee and persistent shades of balsamic woods.
THE SOUL.
With Cabernet Sauvgnon and Merlot it is possible to yearn for perfection. Equilibrium. These are vine varieties whose astuteness allows them to be placed in even inexpert hands, rationally. However, a mature understanding leads to the creation of sensual, prized, authentic wines.
